
Mexican Seafood Cocktail - my friends introduced me to this, we kept going out to the same restaurant to have it. Then I looked for info on how to make it. Everyone was shocked to find out the secret ingredient.
Campechana
1/4 cup Ketchup
1/4 cup LIME JUICE
1/4 cup chopped white/brown onion
1 lb. shrimp, cooked and peeled (or 1/2lb shrimp and 1/2 lb cooked crab)
1/4 cup cilantro, snipped
Lime wedges
Combine sauce ingredients - ketchup, lime juice - and add water, about an equal amount (1/2 cup). Stir in fish then chill for a half hour. Taste to make sure it doesn't need more ketchup or lime juice. Add chopped garnishes on top (onion & cilantro) and serve with lime. Yum. Serves 2 - 4, or Me!
